Spinach Salad with Apples, Pecans, & Dried Cranberries

Makes 4 servings

2 handfuls of spinach, washed and dried
1 large English cucumber (or 2 regular), sliced with seeds
1 cup dried cranberries (I prefer Craisens—big resealable bag from Costco)
1 apple, peeled and diced
¾ cup feta cheese, crumbled
½ cup pecans, chopped but not minced
Note:  If you are not a fan of feta, simply omit it.


Directions:
Toss all together with with ¾ cup vinaigrette or serve on the side.

White Wine Vinaigrette

Ingredients:
1/2 cup white wine vinegar (could use lemon juice as a substitute)
1 Tbs. dijon mustard
1 tsp. fresh garlic, minced
1/4 tsp. salt or to taste
1/8 tsp. pepper or to taste
3/4-1 cup extra virgin olive oil

Directions:
1.  In a small bowl, combine together vinegar, mustard, garlic, salt and pepper. 
2.  Whisk in olive oil to emulsify.
